Yes, they are. I love refried beans. I usually eat them with tortilla chips. The Spanish Rice is good, too.
A tortilla, a good chili relleno, 2 beef sour cream AND 2 Cheese enchiladas (The sour cream is spread over the top.)

I make Home style enchiladas. No meat. They're flat.
Heat corn tortilla in hot oil, just a quick dip - a couple seconds each side. You want to heat and oil them, but they'll start getting pretty crispy pretty quickly. So, a quick dip, turn it over (use tongs) then lay it on your plate. I stack up 4, 5 if I'm feeling good, lol. Cover each tortilla with 3 or 4 tablespoons of enchilada sauce. On each layer, sprinkle grated cheddar cheese and diced onion. Stack up however many you want and have a blast.

I even make my own tortilla chips. I just fill my cast iron skillet with about an inch of good EVOO. Heat it to just short of boiling. Dip the edge of a tortilla into the grease. If it doesn't bubble, it's not hot enough. Heat it enough that you get a nice 'bubbling' when you stick it the chip into it.

While the oil is heating, I cut up however many chips I want. You get 6 out of one tortilla. I put out a double layer of paper towels. Put the chips into the oil for maybe a minute. stir them around a bit. When they seem set, turn them over for another minute. Using a good scoop, take them out and spread them on the paper towels. I quick pat the top with another folded paper towel, then quick salt then, then they're ready for eating refried beans. If you just want chips for snacking, like for the game or something, sprinkle shredded cheese all over them, then put them under the broiler long enough to melt the cheese. Put the chips on your serving platter and you're good to go.

I tried this pasta made from chick peas and lentils and it was disgusting. Don't ever buy this!
My sauce was ok, made it with fake meat (pea protein crumbles) honestly wouldn't have know the difference from hamburger meat, but that pasta was like cardboard. Never again!

That's funny. We often have that same brand of pasta in our pantry.

My g/f, (who is on a diet very similar to yours) has the pasta with pesto; she seems to like it. My opinion of the pasta is pretty much the same as yours - like eating dry cardboard. I've even tried over cooking it to make it softer, doesn't make much difference.

Ps I've made that raiku twice now, it's a great healthy sauce to pair with almost anything! Keeps for a long time in the fridge too.....

Glad you're liking the raita. My favourite is cucumber, but you can make it with other things also.

Boiled potatoes (firm), peeled and cut into bite size pieces is also popular. In this case its called alloo (potato) raita.

Because that is the only way I have ever had them, ~smile.

But you're right about the nutrients in potato skins. My granddad used to scold anyone who discarded potato skins in his presence. And he should know what he was talking about. At 104, he was on a trip from India to England, travelling solo, when he passed.

You could try them unpeeled with thin skinned potatoes, I'm not sure how good it would be with potatoes that have a thicker peel.

I mostly eat Russets. That may be your thicker skin. But I get along with then ok.

I grew wp eating peeled as well. Mostly mashed. May have had them diced with the peels on, can't remember for sure. But somewhere in the 80's, I think, I read articles about 'Why Peel Them,;' and 'Eating the peel is fine.' So, I started eating them.

Now I just heat them in the microwave, open 'em up into edible pieces, salt and pepper, butter over and sour cream on top.

Now, about that steak,,,. :lmao:

Anyone ever seen these before? They remind me of something from the Smurfs. Or Mario Brothers. I picked them up at a Farmers Market yesterday.

Apparently they are some kind of squash, and good in a stir fry. Will post an update after I've cooked and tried them.

I'm mostly neutral to squash - it helps bulk up a meal without having to resort to potatoes. Green beans I like sometimes - depends on what the rest of the meal is.

Here is what I did with the squash:

1 cauliflower - chopped into florets
2 largish carrots - thinly sliced
1/2 onion - sliced
5-6 white mushrooms - chopped
1 large capsicum - chopped
1 large tomato - diced
5 pattypan squash - stems removed and quartered

preheat oven to 420F

drizzle chili infused sunflower oil and sprinkle with rosemary and caraway seed

spread parchment paper over a large baking sheet and smear with garlic butter.

spread the veggies over the baking sheet. Add salt and pepper to taste.

pop into the oven and set the timer for 33 minutes.

pull out and mix after 20 minutes.

This is what came out:
roasted veggies with pattypan squash.gif
throw an ikea salmon fillet on the griddle

sprinkle with lemon pepper salt

Cook for 17 minutes

Yummy...

That looks quite nice, Lance. Back in "The Olden Days" I could cook like that, but not now. My main menu these days is, "Hello, Domino's?"

We have been roasting everything! I love it, it's so easy, and it brings out the taste/flavors of all vegetables!

Throw it all in a huge glass baking dish, toss with olive oil and spices, different spices every time i do it, love to experiment, and it cooks while you finish your work or camshow or whatever it is you are doing. We toast white, orange and purple potatoes, yucca, green beans, asparagus, carrots, parsnips, shitakes, turnips, tomatoes, celery, you name it! Whatever is in the fridge gets cut up and roasted so it's different every time! We make batches so it lasts for days.
