A tortilla, a good chili relleno, 2 beef sour cream AND 2 Cheese enchiladas (The sour cream is spread over the top.)
I make Home style enchiladas. No meat. They're flat.
Heat corn tortilla in hot oil, just a quick dip - a couple seconds each side. You want to heat and oil them, but they'll start getting pretty crispy pretty quickly. So, a quick dip, turn it over (use tongs) then lay it on your plate. I stack up 4, 5 if I'm feeling good, lol. Cover each tortilla with 3 or 4 tablespoons of enchilada sauce. On each layer, sprinkle grated cheddar cheese and diced onion. Stack up however many you want and have a blast.
I even make my own tortilla chips. I just fill my cast iron skillet with about an inch of good EVOO. Heat it to just short of boiling. Dip the edge of a tortilla into the grease. If it doesn't bubble, it's not hot enough. Heat it enough that you get a nice 'bubbling' when you stick it the chip into it.
While the oil is heating, I cut up however many chips I want. You get 6 out of one tortilla. I put out a double layer of paper towels. Put the chips into the oil for maybe a minute. stir them around a bit. When they seem set, turn them over for another minute. Using a good scoop, take them out and spread them on the paper towels. I quick pat the top with another folded paper towel, then quick salt then, then they're ready for eating refried beans. If you just want chips for snacking, like for the game or something, sprinkle shredded cheese all over them, then put them under the broiler long enough to melt the cheese. Put the chips on your serving platter and you're good to go.
